Entry Level Cook Program – Spring Intake 2024

The Spring 2024 Intake of the Entry Level Cook Program started on April 15th with 16 participants. In this intake the group started with 8 weeks of instructional classroom learning and were sent to internship on June 10th for 4 weeks following the classroom time. The last day of on-the-job training was July 5th.

Participants spent the first week acquiring the essential certifications and training to be employed in a professional kitchen. The programs included PEI Best Service Excellence delivered by TIAPEI, CPR & First Aid training, WHMIS 2015 certification, Food Safety course, and essential knife skills delivered by the instructors of the program.

In the 7-weeks that followed, instructors delivered curriculum designed by Holland College to give the students a basic understanding of some of the concepts and techniques used by cooks in a professional setting. These topics included but were not limited to, following a recipe, measurements and conversions, common kitchen terminology, knife cuts, safe food/equipment handling, and basic cooking techniques. Internship began on June 10, 2024, with students being placed in industry kitchens for the start of the 2024 visitor season.

9 students continued to work for the duration of the tourism season in PEI kitchens. With the continued support of SkillsPEI, TIAPEI will continue to host professional development programs with the ultimate goal of supplementing the tourism labour force on PEI.
